Each year in June our sweet neighbor brings us a huge bag with rhubarbs. Like us he has a country house in Sweden, but unlike our country house garden, his got an overwhelming rhubarb bed. I love rhubarbs. It's the taste of summer for me. We have been making rhubarb compote, rhubarb jam and rhubarb crumbles. This year we tried out rhubarb lemonade too. Another summer favourite back from my childhood is elderflower lemonade, but since both girls are allergic to citrus fruits and most elderflower recipes require lemon, I was happy to find a rhubarb recipe that didn't. Frida Viola helped me and she was also the first to taste. We think it turned out quite good, especially the colour is really irresistible.
1 kilo rhubarbs sliced into small bits
5 cardamom pods
½ dl apple cider vinegar
2 L water
500 g cane sugar
1 vanilla pod
Mix all ingredients, let them boil together for 5 minutes and then turn off the heat. Let it cool down and pour it through a sieve and if necessary also a piece of cloth. We like it unfiltered though. Drink it with water or sparkling water.
